Health Benefits? Kale Yeah!


Kale comes in all shapes, shades and sizes. In my parts of the country, purple kale only comes organic and that is fine with me. I will pay the hefty price for it. Purple kale has a distinctly different taste than green or red kale. It’s like a hint of sweetness, but not too much. This particular kale tastes good in my kale salad, and I will have the recipe down below.

The kind that most people see and buy is curly kale. It is green, has extremely curly ends, and tends to be heavier in weight than the other types. This kind tends to be more bitter than the others and has a peppery flavor.

Lacianto kale, aka dinosaur kale, is much sweeter in taste and very hearty. It’s flavor is very earthy but not overwhelming. I tried it for the first time on Monday and was blown away by it. It too only comes organic in my parts.

What is so special about kale? Well, for one it looks pretty, and when food looks good, it tastes good and you’re more inclined to eat it.

Kale is filled with antioxidants like carotenoids and flavonoids to help protect the body against cancer. It’s low in calorie but high in fiber. I guess that’s why parents and doctors always say to eat your greens (hint, hint). It has more iron and protein than beef, which is good for us vegans, as well as more calcium than dairy milk (which you should not be consuming anyway because studies have shown it causes osteoporosis).

Kale is high in vitamins A, C and K, which are good for vision and skin, immune support and metabolism, and protects against cancer, respectively.

There’s no need, but I will say it anyway. EAT YOUR GREENS!!!
