Benefits of Red, Orange and Yellow Bell Peppers

I put bell peppers in everything I cook and not just for the taste. Using red, orange and yellow bell peppers add vibrant colors to any dinner dish. They also add flavor and a little bit of a crunch if you don’t cook them all the way. I especially love these in dishes like stir fry, baked potatoes and even simple meals like over some black beans and rice.

Not many people know that bell peppers have a lot of nutritional value (I didn’t know either). I think I will continue to incorporate them more in my meals, as if I could. I eat them on and with everything.

Here are some benefits of this vibrant veggies:

  • Vitamin C – which is an antioxidant that fights against free radicals
  • carotenoids – the body converts beta-carotene into vitamin A which aids in good vision, immune support and healthy skin
  • lycopene – which aids the body against oxidative stress
  • fiber – which we all know is good for digestive health

These are just a few of the many benefits of bell peppers. Add them to your meals and see if they don’t brighten up your day.
