It is very rare that I make recipes for an entire dinner, or that I make my entire dinner from scratch. I used to do it a lot when I first became vegan, but that was when I had more time. Now, as a teacher, I don’t necessarily have less time, just less energy to commit to cooking an entire meal from scratch. I was so proud of myself because this dinner was not recreated. I literally went to the grocery store and had no idea what to buy. Once I saw the marinade, I knew then exactly what I was going to put together. And of course, I couldn’t make this 100% plant based meal without a video to go along. I have really gotten into making videos for foods that I make for the first time and this was no exception. Making a video, I realized, is much easier than making a recipe book. I really hope you all try this recipe and enjoy it!
